Badam Burfi (Almond cake)

Badam burfi is a sweet made from almonds, milk and sugar. This is not really healthy as sugar is added, but nevertheless makes a good occasional treat for kids.




Recipe source : Mother-in-law

Serves : Makes around 30 medium burfis

Time taken : 45 to 60 minutes 


INGREDIENTS:

11/2 cups whole almonds
11/2 cups milk
1 cup sugar * (see pt no.3)
2 tablespoons ghee

METHOD :

  1. Soak almonds overnight and peel the skin (or) put almonds in boiling water for 10 minutes. Peel the almonds after it cools down.

2. Grind the almonds with milk to a fine paste as shown below.


3. Now take the same quantity of sugar as the paste.


4. Mix the almond paste and sugar and transfer to a kadhai. Keep the gas on high heat and keep stirring.


5. Add few spoons of ghee and keep stirring till the mixture starts to leave the side of the pan. (this might take around 30 minutes)


6. In the meanwhile, grease a plate with ghee and keep aside.


7. Pour the mixture on the greased plate, spread evenly and wait for it to cool down completely.


8. Once it cools down, cut the burfi into pieces and store in an airtight container.


Note :

If you keep the stove on simmer, the burfi may take more time to leave the sides of the pan.
